Cheating on TWD
I’m cheating this week. It’s not Tuesday, but as I was flipping through my “Baking - From My Home To Yours” book, thinking about which selection I would pick if it was my turn - which it won’t be for about 2 years - and I came across Cinnamon Squares. A delightful looking little cake full of espresso powder and chocolate. What could be wrong with that?
I took out all of the cinnamon and replaced it with freshly grated nutmeg. I layered the batter in the pan with a mixture of espresso powder, sugar and Ghirardelli chocolate disks. The frosting was more chocolate and a little butter to help it spread.
WOW! I served it last night for dessert and it was a big hit. Even Alexander liked it, and he’s not crazy about coffee.

This was one of the first recipes I made out of the book, and I agree, it’s fantastic! I also “cheated” on TWD this week with the Chewy, Chunky Blondies (page 109) - very good.
