Here’s a fun little cookie for the holidays – or any day in between. These are a shortbread cookie with chocolate flecks and flavored with espresso powder, and they are nicely sweet without being overly sweet. Does that make sense?
I got this recipe from one of those “Christmas Cookie” magazines I always get suckered into buying at the market check-out.
Now, my pictures aren’t the greatest because usually I dust them with powdered sugar before serving. However, these were going straight to the freezer so I skipped it. Practical, yes – but it makes for a bad photo.

Espresso Delights
1 c. butter, softened
2/3 c. powdered sugar
1 tbs. instant espresso powder
1 tsp vanilla extract
½ tsp ground cinnamon
2 c. all purpose flour
1 oz. semisweet chocolate, grated
Additional powdered sugar, for dusting
Preheat oven to 325 degrees.
In a large mixing bowl, beat butter and powdered sugar together until smooth. Add espresso powder, vanilla and cinnamon. Beat until combined. Add the flour and chocolate and mix until combined.
Shape dough into 1” balls, and place on ungreased baking sheet. Flatten slightly.
Bake for about 12 minutes, or until the edges are set and bottoms are light golden brown. Transfer to a wire rack and let cool.
Dust with powdered sugar.
