Cinnamon S’mores Crispy Treats

Do you ever get tired of making the same old Rice Krispie Treats? I know I do. I mean, Rice Krispies don’t have any flavor to begin with, and marshmallows just add sticky sweetness to the mix, so truth be told, I really don’t ever eat them.

Inspired by a photo I saw on Serious Eats,  I dug through the cereal section of the pantry and combined Cinnamon Toast Crunch, Rice Krispies, marshmallows and chocolate chips to come up with Cinnamon S’More’s Crispy Treats.

The kids LOVED them. And I will admit to stealing a few bites – the cinnamon toast cereal really gave these a great warm toasty flavor.

I added the chocolate chips while the marshmallow mixture was still hot, so the chips melted and swirled throughout the bars, resulting in more intense chocolate flavor. I’ll definitely be making these again.

Cinnamon S’More’s Crispy Treats

3 tbs. butter
1 10 oz package marshmallows (regular or mini)
3 cups Rice Krispies cereal
3 cups Cinnamon Toast Crunch cereal
1 cup chocolate chips

Combine butter and marshmallows in a large bowl – microwave on high for 2 minutes, stopping to stir halfway through cooking time. Remove from microwave and stir until smooth. Add cereals, stir to combine. Add chocolate chips while mixture is still warm and mix well. Press mixture into a greased 9×13 pan and allow to cool completely. Cut into squares and serve.

    This is a fabulous idea for mix in’s. Now I’m thinking of adding chocolate chips and some of those golden grahams! – Great idea.

    My son would love these! I bought the cereal for baking this weekend.. and then the supermarket was out of marshmallows! How does that happen?

    Cinnamon Toast Crunch is really good, and I bet it would be really-super-good in these crispy treats! I think my husband would be pretty excited if these made an appearance in our kitchen.

    Okay. This is a great idea. Regular rice crispy treats don’t do much for me. But these sound yummy.

    I love how you mixed it up with these. Regular rice krispies treats can get so boring, but now that you’ve got me on this idea of mixing cereals – the options are endless!

    You know I love them. You have a brownie blog, I could probably start a Rice Krisp Treats blog. They’ve gotta be gooey and chewy and not so dry though! You saw my latest, right.
    My kids love Cinnamon Toast Crunch, so I’m sure they’d like these. And chocolate–yes!

    Oh, man, I have to try those someday! In the past I’ve made S’more cereal treats using Golden Grahams, Cocoa Puffs, chocolate chips and mini marshmallows. Those were delicious but I think the Cinnamon Toast Crunch/Rice Krispie combo might be even better! Cocoa Puffs taste a bit artificial. Delicious, but artificial.

    I tried this recipe out for a bake sale on a hot day (nothing worse than a hot oven in a hot house) and I have some advice to share:
    Do NOT use old marshmallows! I had an old bag hanging out in my cupboard and thought they would be fine – huge mistake! They didn’t melt at all and I couldn’t get all the cereal goodness into the mix, leaving me trying to smoosh it all together with my hands while it was still quite hot. Not fun, and there was very little marshmallow flavour to it.
    But then I tried it out with new marshmallows later and it was perfect!
