TWD – Milk Chocolate Mini Bundt Cakes


This is the second time this week I’ve gone renegade and made a recipe that was not the intended selection for the group.

Our choice for this week’s TWD should have been either All In One Holiday Bundt Cake, or Chocolate Chestnut Cake.

And I didn’t make either.

In my defense (and this is a dandy one), I don’t have any takers for either cake because of the nuts. I might make the bundt cake to give to the Vet’s office when we go out of town next week (we’re going to Lake Tahoe for Thanksgiving – woohoo!!), but for right here, right now, you get this:

Since I don’t have a mini bundtlette pan, I made the cakes in my large Texas-size muffin pan. The glaze that accompanies the recipe is a pain with a capital P – I couldn’t get the consistency right, so I gave up and used leftover malted chocolate frosting that I had in the fridge.

These were really good, and I’m looking forward to making them again once they are actually chosen for the group.

    I’m probably not going to make the chestnut cake for next week either, so I’ll be scouting around for a rewind that looks good. I’ve just done 3 weeks of TWD with no chocolate. (I know, aren’t you proud of me? Don’t worry, I made up for that in all the other things I’ve been doing!)
    These might be a good option. oh, I guess they aren’t a rewind though. Hmmm? anyway suggestions?

    I think the holiday bundt cake would be good without nuts – it’s still got the cranberry and apple and all the good spices.

  7. Ooh, that does look good and chocolatey, after all the wholesome pumpkin and cranberry I’ve been baking with…I made the holiday bundt last year without nuts, and it’s still very good!

  12. I would have picked that chocolate one over the other bundt cake any day of the week! I love rebels!
    My brother has a place in Tahoe…we went there last year and it was so fun. What side do you go to … North or South? We went to the side where it borders Nevada..not sure what side it is!! I just know my bro likes the casinos.

    • Michelle – All I know is that we will be on the Nevada side! I’ll be taking pictures, as it’s been snowing quite a bit there. I can’t wait to go – it’s going to be beautiful.

  13. This sounds like a great recipe and I’m ready for some chocolate!
    Don’t shy away from the all-in-one bundt. Just beat it really well so that the pumkin is as light as possible. (and don’t use the whole can, use 3/4)

  15. OK, so I’ve loved all of the TWD picks this month, but right now, that milk chocolate goodness looks better to me than all of them combined! I’m so in the mood for something chocolate right now!

    I saw your comment on my blog about the TWD cookies vs. the AM gingersnaps. I liked the gingersnaps better for pure ginger flavor. The more molasses cookies I eat, the more I like them, though. I think they really benefit from resting a couple days.

  19. Good idea about using the Texas-sized muffin pans. I’m still waiting to acquire a mini-bundt pan, but I do have the muffin pan.

  23. At least if you had to substitute you did it with a fantabulastic recipe. Can’t go wrong with chocolate. Especially not in mega muffin form. Lake Tahoe sounds fun!
