Soft and Chewy Chocolate Chip Cookies


In my continuing efforts to drive David round the bend, I recently tried another chocolate chip cookie recipe.

If you’re not familiar with the scenario, allow me to give you the condensed, Reader’s Digest version: he doesn’t always understand why I have to continuously try new recipes when we already have a favorite.

Because it’s fun? There could be a version out there that we like even more? And did I mention it’s fun to watch his face as he takes a bite – not sure which version he’s eating?

This latest batch, from Martha Stewart’s book “Cookies”, caught my eye because the title clearly states, “Soft and Chewy”.

Perfect.

Just the way I like them. And they do not disappoint, either – they really are soft and chewy – providing, of course, that you don’t overbake them. There is a fine line between underdone and perfectly done.

I’ll let you know when I find that line.

Soft and Chewy Chocolate Chip Cookies - adapted from Martha Stewart

2 ¼ cups all purpose flour
½ tsp baking soda
½ tsp salt
2 sticks (1 cup) unsalted butter, softened
½ cup granulated sugar
1 cup packed brown sugar
2 eggs
2 tsp vanilla extract
2 ½ cups chocolate chips

Whisk together flour, baking soda and salt. Using an electric mixer, blend together butter and both sugars. Add eggs, one at a time, then add vanilla. Stir in chocolate chips.

Drop dough by tablespoons (or a #30 dough scoop) onto parchment lined baking sheets. Chill dough for an hour (or longer, if necessary). When ready to bake, preheat the oven to 350 degrees. Bake cookies until the edges are lightly browned but the centers are still soft, about 10-12 minutes.

Remove from oven and transfer cookies to a wire rack to cool completely. Store in a covered container.

Yield – about 3 dozen

  2. These look like really great chocolate chip cookies! I’m with you – even if there’s a favorite recipe, what if there’s a better one out there??? :)

  3. Soft and chewy cookies are my favorite, too. I’ll have to try Martha’s version. My normal go-to recipe is from Corriher’s Cookwise where you have the choice of thin/crispy, soft/chewy, and in-between.

  5. Those cookies sound great–I love soft and chewy. It cracked me up when you said he doesn’t understand trying new recipes when you have ones you love. I can totally sympathize with that :-D . It seems I’m always trying new variations and so I never get around to making some of our tried and true favorites.

  6. Just make a lot of them… so even if your son gets his bike, you’ll have a lot stored up for stress relief :) . They look fantastic!

  8. you’ve probably heard this but have you found the fountain of youth before your followers ? I know you are a good role model and a much better version of Betty Crocker not meant to negative .

  9. I’ve often looked at these cookies in the book, and I’ll confess, I’ve never tried them because I was worried I’d be disappointed. I’m glad that I read your review of these cookies because now I’m excited to try them! I love some soft and chewy CCCs.

  11. My parents are continually frustrated by the fact that I don’t really cook the same thing twice. There is just so much food I want to eat and I only have a limited amount of time in which to eat it!

    These cookies look seriously delicious. Although so do all of your CCC recipes…

  13. You know I’m all over the ccc’s! I always think I’ve found my favorite, and well, have had the same 1 (or 2 or 3) favorites for a while now, but I LOVE trying more! My husband doesn’t seem to get it either.
    I’m actually whipping up one made with olive oil right now!

  14. These look super-yummy! Maybe you need a CCC project! My boyfriend understands why I like to try out different recipes, but he sometimes thinks I want to take on too many in a given weekend and convinces me to scale back, which is probably good for both of our sanity.

  18. Sounds like me! Even though my boyfriend and I have our favorites, I’m always on the lookout for a better chocolate chip cookie. Just curious… what’s the favorite in your household?

    In mine, it’s the Jacques Torres recipe from the New York Times… it calls for bread flour and cake flour, which I don’t always have on hand so that’s my excuse for why I can’t make them all the time and must try new recipes ;)

  20. Too funny – my husband doesn’t understand why we can’t repeat recipes more often! I try to explain to him that it’s more fun to try new recipes but he just doesn’t get it. I love a soft and chewy cookie and haven’t tried these even though I just borrowed that book from the library. Simply not enough hours in the day for all the goodies I want to make!
