Triple Chocolate Mudslide Cookies

Several weeks ago, 2 long-time friends (hi Lauren and Neil!) came to town for a few days of gambling, and the kind of debauchery that can only happen in Las Vegas.
We met them for dinner at Sushisamba on the last evening of their stay, but to cover my bases, allow me to state the following 2 facts:
1. I have no photographic evidence (that I’m willing to share) of that night we went out together.
2. What happens in Vegas, stays in Vegas.
* ahem *
Since Neil is a confirmed choco-holic like myself, I had the brilliant idea to make a batch of these fabulous, overwhelmingly chocolate cookies with the express intent of bringing a box for him to take home and enjoy.
Well, the first part of that statement should have tipped you off – I had the brilliant idea. I have plenty of ideas, mind you – but very few of them are brilliant. I made the cookies, but with the ensuing chaos that inevitably happens in my home before I can actually get out the door for a rare evening out, I forgot the box that I had packed just for him.
Sorry, Neil.
All is not lost, however, since his lovely wife Lauren is getting to be quite the baker. And really, I suggest that she make these soon, perhaps this weekend - they aren’t difficult at all and the end result is well worth the small time investment.

Triple Chocolate Mudslide Cookies - adapted from a recipe by Martha Stewart
2/3 cup all purpose flour
2 tsp baking powder
½ tsp salt
6 tbs. unsalted butter
6 oz. unsweetened chocolate, chopped
1 pound semisweet chocolate, chopped
5 large eggs
1 ¾ cups granulated sugar
1 ½ tsp vanilla extract
1 pound milk chocolate, chopped ( or use chips)
Preheat oven to 400 degrees. Line several baking sheets with parchment paper and set aside.
Sift together flour, baking powder and salt. In a heatproof bowl set over simmering water, melt together butter, unsweetened chocolate and semisweet chocolate. Stir to combine and set aside to cool slightly.
Using an electric mixer, beat together eggs, sugar and vanilla extract until light and fluffy, about 3 minutes. Add cooled chocolate mixture and mix on low speed just until combined. Stir in flour mixture, then stir in chocolate chips.
Using a tablespoon or ½ oz cookie scoop, drop dough onto prepared baking sheets. Do not crowd the cookies. Bake until the cookies are no longer shiny in the center, about 12 minutes. Remove from the oven and allow to cool on baking sheets.
Yield – about 4 dozen

So with almost 2 1/2 lbs. or chocolate, 5 eggs and just a lil sugar, these are pretty healthy–RIGHT??
Are they brownie/gooey like inside?
Why or why cant chocolate be a major food group? Right up there next to white sugar and white flour. I would like to see the food pyramid revamped with these cookies near the bottom. I could eat a cookie sheet full.
I’m curious about the small amount of flour and the 5 eggs in this recipe. It sounds like a wonderfully fudgy cookie! Sounds like you had good intentions to give those cookies away ;D

Hilarious!!! Now, I have 2 choices for this weekend – move things out of the garage & into the storage unit or bake… I think I will bake! I will report back, since I have a feeling Neil will not be able to type, since he will be covered in chocolate!

So I finally got around to making these cookies last and WOW!!! I was nervous by the amount of chocolate. However Neil was not at all! I am not sure you can make a more chocolatey cookie ever! Now I know why you subconsciously left them at home…I would too!
